Roasted Chickpea Wrap


There are days when I  don’t have the patience to cook up a storm, especially when I’m tired from a workout or have been running around the whole day.

So, this is my go-to meal for dinner.  It’s simple and easy to make.  You can add whatever you fancy to make it a hearty meal.  I sometimes bake sweet potatoes and eat it as a side if I’m really hungry.

Ingredients for Chickpea mix:


-1 can chickpeas or 1 1/2 cup of boiled chickpeas

(It is best to soak chickpeas overnight to reduce the boiling time. It normally takes 5 1/2 hours to boil chickpeas if not soaked)

-1 tsp paprika
-1 tsp garlic powder
-1/2 tsp himalayan salt
-1/2 tsp pepper
-1/4 tsp. cumin powder
-1/4 tsp cayenne powder
-1 tbsp. grapeseed oil
-1/2 tbsp. lemon juice


Preheat oven to 375degrees.  In a bowl, mix all ingredients together making sure to coat chickpeas evenly with the spices.  Bake in the oven for 15-20 minutes or when chickpeas are slightly crispy.

To assemble the wrap, you’ll need:


-store bought whole wheat pita wraps (or you can make your own)
-lettuce/ greens
– 1 cucumber
– 1 red bell pepper
-2 Tomatoes
-1 avocado, diced (season with salt and pepper)
-homemade Tahini garlic sauce

My recipe –  3 tbsp tahini

1 tbsp. bragg’s amino sauce

1 tbsp. lemon juice,

1 tsp. minced garlic

1 tsp. apple cider vinegar,

1 tbsp. water

Mix and adjust accordingly. If it’s too tart, you can add a teaspoon of raw honey.
